Matoom Cream Cheese Cake (1 round, 9-inch / serves 10 slices) is one of the newest creations we’re truly proud to introduce at cakestudio365. It’s a homemade butter cake folded with candied bael fruit, finished with a cream cheese frosting thoughtfully infused with the gentle aroma of matoom.
Keep in chilled temperature at 2-4 Celcius. The Best Before period is seven days from the receiving day.

This cake didn’t start with a trend forecast.
It started with a memory. The candied bael we use comes from “Trok Matoom,” an old Bangkok neighborhood once known for traditional bael processing. Years ago, we visited the area while working on a school project. That first impression stayed with us. Today, being able to bring an ingredient from that community into our kitchen; and turn it into something that adds value in a new form; feels meaningful in a quiet but important way.
A Gentle Matoom Presence in the Cake
The matoom character in this cake is intentionally subtle. It’s not loud or overly sweet. Instead, you’ll notice soft bites of candied bael folded into the butter cake, adding both texture and a mellow fruit note. The flavor builds gradually; recognizable, but never overwhelming. It’s the kind of taste that makes customers pause for a second bite.
Light Matoom Aroma in the Cream Cheese
We wanted the frosting to carry the scent of matoom without adding extra sweetness. After several trials, we began lightly torching dried bael and turning it into an infused syrup. This syrup replaces refined sugar in our cream cheese frosting, giving it a natural sweetness and a delicate aroma.
The result is a cream cheese frosting with a soft, lingering aftertaste; fragrant, balanced, and still very much in the style of cakestudio365. Not too sweet. Not too heavy. Just enough to create depth.

The color of the cake may also vary slightly from batch to batch, depending on the moisture and tone of the fruit; part of the charm of working with real, seasonal ingredients.
